Vegetarian Lasagne

Remember Catherine cooks for a large amount of children so reduce ingredients to suit your family size.



4 grated carrots
4 grated zucchini
2 tablespoons oil
2 large cans diced tomatoes
5 tubs ricotta cheese
10 packets lasagne sheets
1 jar of tomato paste

You can also add:
2 tablespoons minced garlic
1 pinch dried oregano
1 pinch dried basil

White Sauce
5 tablespoons margarine or butter
11 tablespoons corn flour
1 pkt of cheese


1. Fry oil garlic and veggies into a pot.
2. Add tomatoes, tomato paste and herbs, bring to boil.
3. Reduce heat and simmer for 30mins.
4. In dish, add some sauce just to cover the base.
5. Lay one layer lasagne sheers, spread sauce over then a layer of ricotta.
6. Repeat step 5 with grated vegetables (depending on how many layers you want your lasagne to be) losartan 50 mg tablet.
7. Top with white sauce.
8. Cover with foil and bake in moderately slow over for 30-40mins—last 5mins
take foil off.

White Sauce Method

  1. Grate cheese.
  2. Melt butter, add corn flour and cheese stirring 30 seconds.
  3. Slowly and add milk* until thick and creamy.
    *when adding the milk do it slowly, as there is no quantity for milk.

Apricot Chicken and Rice

  • 6-8 cups of rice boiled
  • 3 packets chicken fillets diced
  • 2 onions diced
  • 6 carrots diced
  • 2 cups peas
  • 2 cups corn
  • 6 packets French onion soup mix
  • 4 large cans Apricot Nectar

Fry chicken and onions when brown add all other vegies.

Mix soup with boiling water add to chicken mix losartan 100mg tab.

Add Apricot nectar and simmer for 15 minutes.

Add rice and heat for a further 15 mins and serve (a small army!).

Savoury Scones

  • 10 cups self rasining flour
  • 6 tbsp butter
  • milk to consistency

Rub butter into flour with fingers. Mix into a soft dough with milk. Flatten and cut into circles.

Things you may add before cooking:

Cheese, Grated carrots, mixed herbs, chopped parsley

Bake at 220°C for 10-15 mins
